WHere is an easy interpretation of a drink found on our latest cocktail list. It's a large-volume prepared mix which is packed full of flavours of the Christmas time, rendering it excellent for hosting a festive gathering. Reserve the remaining citrus syrup to use in breakfast cocktails, puddings, or to mix more rounds of the drink.
Bikini Recipe
Makes enough for 10 servings
For the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put all the components into a pot, heat until it reaches a simmer, stirring to dissolve. After that, remove from the stove allowing it to cool fully. Transfer to a sterilised bottle, seal and store chilled, where it will keep for up to one month.
Preparing the Cocktail Base: Combine the specified spirits and syrup into a sizeable container, leave to sit for 60 minutes, then strain , ideally through a fine cloth, making it completely strained.
For serving: Add 85ml of your batch mix into your mixing glass containing ice, and agitate carefully for about 60 seconds until cold. Strain into an cold coupe glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the top.
